During extended boondocking trips: Where do you store extra water? What brand container do you use? How many gallons do you bring?

Look for room under the bed of your pickup that is to one side or the other of the driveshaft, and away from suspension components, hoses, tubes and such. It is very possible that you can suspend a tank there using padded steel straps that are bolted to the bed floor, similar to an RV or fuel tank mounting. I have done this very successfully in the past.
The type of tank or container you use depends on what will fit. Use plastic, but it has to be rugged. An RV tank is a safe bet, and they are made in many sizes.
You will need a drain valve mounted down low, or a pump to bring it up to your camper. You will also need to rig up both fill and vent lines.
The beauty of this is that the weight is carried low, and in what would otherwise be wasted space.
Food for thought, if nothing else.

One more thought along the same lines; you might have unused space ahead of your rear wheel wells (in the bed) that you could mount a small tank or two in. Add fill, vent and drain hoses that you can access above and below the bedsides. Or add a small pump to pump it into your main tank fill.
It would be safe from tampering and not underfoot.

Water is like money, the more the better. Take advantage of the space offered from your jeep. More than likely with your 1191, the weight factor is at the fore front of your thinking or at least it should be. Depending on your needs you should be able to carry more than enough water and beer in your jeep. With sufficient beer available your significant other might be more agreeable to spending a few extra nights, so bring as much as possible. Use the space left in your jeep for enough water for an extra shower or two and some potty flushes.
