Looking for some new recipes to enjoy on your next truck camper adventure? Jenn Crooks of Iowa-based BundutecUSA shares a few of her favorites. Note that most of these recipes are specifically for the Omnia Stovetop Oven, but not all. Enjoy!

1. Omnia Farmers Breakfast (serves: 4)

Ingredients:

  • 1-1/2c Hashbrowns
  • 1/2c Shredded Sharp Cheddar*
  • 1/2c Diced ham or sausage*
  • 1/4c Diced Onion
  • 2 – 3 Eggs
  • 6 oz Evaporated Milk
  • Salt & Pepper

DIRECTIONS

Layer hashbrowns, cheese, meat and onion in Omnia Oven. In a separate bowl, combine evap. milk, Eggs, Salt & Pepper; stir to combine. Once combined, pour over Omnia layers. Bake 45 minutes at 350 degrees or until a knife comes clean when inserted and removed.

Notes:

  1. I pre-make this ahead of time and used the Omnia foil insert. I layer the hashbrowns, cheddar, meat, and onion to do that.
  2. If stored in the freezer or frozen, I will pull it out to thaw the night before.
  3. In the morning, I will mix the eggs, evaporated milk, salt, and pepper and pour them over. It will sink to the bottom and look like it is not enough, but it will expand and be enough, promise.
  4. I also shred my cheese from a block of sharp cheddar as I think it melts better than the pre-shredded.
  5. You can also use any meat you want, but I prefer ham and/or sausage.

2. Omnia Heavy Cream Cinnamon Rolls

Ingredients:

  • 1 can Pillsbury Grands Cinnamon Rolls*
  • 1/2c Heavy Cream + 3T
  • 1/4c unsalted Butter
  • 1/2c Brown Sugar

DIRECTIONS

Arrange rolls in the Omnia Oven and pour 1/2c heavy cream around the rolls. Melt the butter and brown sugar until the sugar is dissolved. Add the additional 3T cream and stir until smooth. Pour butter mixture over rolls. Bake for 25-30 minutes at 350 degrees

Notes:

  1. I find the Pillsbury Grands work better than the generic

3. Fajita Chicken Rice Bowl (serves: 2)

Ingredients for Chicken:

  • 2T oil
  • 8oz Shredded or Cubed Chicken
  • 1t Onion Powder
  • 1t Garlic Powder
  • ½ t Cumin
  • ½ t Salt
  • 2c Bell Pepper sliced
  • 1c Onion sliced

Ingredients for Rice:

  • 2c Cooked
  • 1c Black Beans
  • 1c Tomato
  • Lime

Ingredients for Sauce:

  • 1⁄2 c Sour Cream
  • 1⁄2 t Salt
  • 1T Mayo
  • 1/2c Packed Cilantro
  • 2t Lime Juice

Notes:

  1. I make the Sauce and Chicken ahead of time.
  2. I also make the sauce to use on tacos and other Mexican dishes.
  3. I also eat this with fresh avocado.

To Make Sauce:

Combine all sauce ingredients in a blender and blend until smooth

To Make Chicken:

Heat 1T oil in a skillet. Add peppers and onion to the heated oil and cook for 5 minutes. Push the veggies to the side and 1T oil back to the open side of the skillet. Add chicken to the pan with the seasoning ingredients and cook until the chicken is done. Stir to combine the mixture and mix flavors.

To Make Bowl:

Put rice into the bottom of a bowl or plate, add the chicken mixture, and then cover with the desired amount of sauce.

4. Beers Brats & Onions

Ingredients:

  • 1 Pkg Raw brats
  • 1 can of Beer (your choice)
  • 2 onions (sliced)
  • 2T Butter
  • Salt & Pepper
  • ½t dried Thyme

DIRECTIONS

Sear brats in a pan (10-15 minutes) if you want color on both sides. Remove them from the pan and set aside. Add the onions, butter, and thyme to the pan and cook until the onions caramelize. Scrape the bottom to get the bits included in the onions. Once they start to caramelize, put the brats back into the pan and nestle them within the
onion mixture. Pour the beer into the pan and braise the brats until most of the liquid is evaporated and the onions start to get sticky.

Note:

If you need to add more liquid to finish cooking the brats, that is fine. However, if you cook until all the liquid is gone, the pan will be hard to clean.

5. Omnia Stromboli

Ingredients:

  • ¼ Pound cooked meat of your choice
  • ½ Bell Pepper
  • 1/2 Onion
  • 1 Pizza Crust (I use premade from the fridge section)
  • ½c Pizza Sauce
  • 1c Mozzarella Cheese (shredded)
  • ½c Parmesan Cheese
  • 4 oz Mushrooms, Sliced
  • ¼c Green Olives
  • 1 Egg + splash of water beaten
  • ¼t Garlic Powder
  • ¼t Dried Italian Seasoning

DIRECTIONS

Roll out pizza dough on a station and spread it to be 10” x 15”. (I flour the surface and my hands for best results.) Add pizza sauce to the dough and leave a 1 ½” border around all edges. Add the toppings evenly over the dough (the ones listed are what I like, but you can substitute whatever you prefer). Roll the dough on the long edge to create a log.

In a separate bowl, mix egg plus splash of water, garlic powder, and Italian seasoning. Arrange the log in the Omnia oven and brush it with the egg mixture. Cut 2-3 slits into the top of the log,

Cook in your Omnia Stovetop Oven at around 425 degrees for about 30 minutes. For best results, I turn mine out about halfway through and put it back into the Omnia oven slit side down so each side is even.

6. Omnia Apple Crisp (serves: 2)

Crumble Ingredients:

  • 1/3c Rolled Oats
  • ¼c Flour
  • ¼T Brown Sugar
  • ¼T White Sugar
  • 4T butter, melted

Filling Ingredients:

  • 1c Chopped Tart Apple
  • 1t Cinnamon
  • 1-1/2T Brown Sugar
  • ½T Lemon Juice
  • 1t Vanilla

DIRECTIONS

I premake the crumble and store it in an airtight container or Ziplock baggie. To do this, combine all crumble ingredients until they have a coarse sand-like consistency. When ready to make, combine the filling ingredients and toss to coat everything evenly. Place the filling in the Omnia Oven and add the crumble mixture over the top. Bake at 350 degrees for roughly 15 minutes or until apples are tender but not mushy. Serve with ice cream.

Note:

You can also make these ahead in small mason jars and store them in the fridge until ready to be eaten.
